Three changes take place, one after the other.Moisture leaves first. Most raw nuts hold around five percent water. That water has to escape before any flavour can develop. The nut warms, steam passes out through the skin, and the surface begins to dry.The Maillard reaction follows. Above roughly 285°F, natural sugars and proteins combine to form new aroma compounds. This stage creates the toasted smell and taste. It is also why nut roasting is a chemical process rather than simple heating.Oil movement comes last. The natural oil inside the nut travels toward the surface. This gives the roasted nut its shine and delivers flavour more quickly to the palate.There is a fourth stage that is easy to overlook. A hot nut continues to cook after it leaves the roaster.Why do candy batches come out uneven?
The cause is rarely the recipe. It is usually load size, airflow or drum speed.If the drum is overloaded, nuts in the centre receive less heat than those against the wall. If airflow is too strong, the skin dries before the centre is cooked, producing a nut that looks finished but tastes raw. If the drum turns too slowly, contact points scorch.Size grading also matters. A hot batch left standing in a container will keep cooking and turn bitter.
